Bremen Fudge
























This recipe is a toss back to my Grandpas home town and my wonderful German heritage. Bremerhaven is a small  town on the North Sea, it was a harbor town in the city of Bremen and is renowned for its fresh fish and sea salt.
So we take the sea salt from Bremen, and a European love for dark chocolate and of course marzipan, mix it all together and voila, the yummiest fudge you will ever have!


What you're gonna need:

 2     cup    Dark chocolate chips
2¼   cup    Sugar
24      -      Large marshmallows
 1     can    Condensed milk
 ¼    cup    Butter
 ½    cup    Smooth peanut butter
 1      tsp    Vanilla
 1     cup    Marzipan, coarsely chopped
  1   tbsp    Sea salt

How to get yummy:

1) Grease an 8x8 pan
2) In a non-stick sauce pan, over medium heat; stir together sugar, marshmallows, condensed milk, butter, and peanut butter together.
3) Stir constantly until everything is melt and is just beginning to boil. Takes about 5- 10 minutes. Don't let it burn.
4) Remove from heat and quickly stir in the vanilla
5) Pour the milk mixture into a large bowl and stir in the chocolate chips
6) Once the chocolate is melted and completely amalgamated with the milk mixture, stir in the marzipan chunks
7) Pour everything into the greased pan. Sprinkle on sea salt and put in the fridge to cool
8) When it is set and hard, slice and enjoy!

Oreo Smore Jars

This one is interesting in a yummy way. Very intense flavors. It would be best for a picnic dessert. Plus, it's already in it's own little container! On a side note, one thing I will for sure do differently when I make these jars of yum again is use a piping bag for the brownie batter. It got all over the inside walls of the jar. Not a very attractive look, but if you're laissez faire, I say go with it

Any who, enough babbling. Let's get baking!

What you're gonna need: (this makes 4 smore jars)

 4       -      500 ml (16 oz) glass jars
1½   cup   Graham cracker crumbs
 ½    cup   Melted butter
 ⅛    tsp    Salt

 ½    cup   Melted butter
1¼   cup   Sugar
 2       -      Eggs
 1     tsp     Vanilla
 ⅓    cup    Cocoa powder
 ½    cup    Flour
 ¼    tsp     Salt
 ¼    tsp     Baking powder
 12    -       Crushed oreos
  1     -       Bag of marshmallows

How to get yummy:

1)  In a bowl toss the graham cracker crumbs and salt together, and mix in the melted butter
2)  Pour equal-ish portions into the 4 jars and pack down. You will probably need to use a tool to pat the graham cracks down.
3)  Pre heat oven to 350º F
4)  In a bowl mix the melted butter, sugar, eggs and vanilla together. Beat until everything is well blended
5)  In a separate bowl: stir the flour, cocoa powder, salt and baking powder together
6)  Slowly combine the flour mixture to the egg mixture
7)  Once the batter is well blended, stir in the crushed Oreo pieces
8)  *This is optional, but I recommend it!! Put the brownie batter into a piping bag before trying to put into the jars*
9)  Put the batter as evenly as possible into each jar
10)  Place the jar onto a cookie sheet and into the oven
11)  Bake for 30- 40 mins, until a toothpick comes out clean
12)  Fill the jars with marshmallows and put them back in the oven on broil
13)  Watch them closly. It wont take long for the marshmallows to start browning
14)  Once the marshmallows are nice and browned, let cool off

Cornbread Con Pavo

Spicy slow roasted turkey, applewood bacon, monterey jack cheese, and avocado all sandwiched together between home made cornbread. Need I say more?

What you're gonna need:  (this makes 4 sandwiches)

 ¾    cup    Corn meal
1¼   cup    Milk
 1      cup   Flour
1½    tsp    Baking powder 
 ½     tsp    Salt
 1     tbsp   Oregano    
 ⅓     cup   Sugar
 1       -       Egg
 ¼     cup   Oil

  3       -       Turkey breasts
 ¼     tsp     Salt
 ¼     tsp     Pepper
 1      tsp     Chili Powder 
 2     tbsp    Soy Sauce
 ½    cup     Water

 4   slices   Monterey jack cheese
 8   slices   Applewood bacon
 1      -        Avocado 

How to get delicious! :

1)  Pre heat oven to 400º F
2)  In a bowl mix the corn meal and the milk, then set it aside for now. It needs to rest 5 minutes or so
3)  In a separate bowl: Mix the flour, baking powder, salt, oregano and sugar together
4) Once the corn meal is ready, stir in the flour mixture and combine in the egg and oil
5) When everything is well blended, pour into a greased 9x8 pan and bake for 30- 35 minutes

6)  In a roasting pan: mix the salt, pepper, chili powder, soy sauce and water together
7)  Place the turkey breasts in the marinade. Ensure they are well coated
8)  Put aside until the corn bread is done
9)  After the cornbread comes out of the oven reduce the heat to 300º F
10) Put the turkey in right away and cook until tender about 30 minutes

11) When the turkey is done and cooling off, cook the bacon. (It's ok if you make a little extra to eat on it's own. Who wouldn't?!)
12) Pull the cooled turkey apart with 2 forks and toss around in the remaining marinade

13) Once everything is done, construct the sandwich to your little heart's desire! I recommend mashed avocado and monterey jack cheese. They compliment everything so well!

Red Velvet Crepes

What the crepe!? Lol ok. Lame jokes aside, crepes are *super* easy to make, not to mention delicious. AND, red velvet crepes are even more tasty! When you're feeling like having a fancy breakfast, go crepes! It's the perfect way to wow friends at a brunch, get together, or even for dessert.

What you're gonna need: ( This makes 10 -11 crepes)


5     -       Eggs
1½   cup    Milk
 1     cup    Water
 2     cup    Flour
 6    tbsp    Butter, melted
 ¼    tsp     Salt
 1      tsp    Vanilla
 2    tbsp    Cocoa powder
 1    tbsp    Red food colouring


How to get yummy:

1)  In a blender (yep, a blender! It makes everything 10 times easier) toss in ALL your ingredients.
2)  Blend until well mixed.
3)  Put the batter into the fridge for about an hour
4)  Over medium high heat, heat a large non-stick pan
5)  Add a dab of butter to the pan
6)  Once the butter is melted, pour ½ cup of batter onto the pan. Swirl the pan so that the batter coats the bottom evenly
7)  Return the pan to the oven and allow to cook for 30-45 seconds, until firmed
8)  With a spatula, loosen the sides of the crepe, and then slide the spatula into the center of the crepe and gently flip.
9) Cook another 10 seconds. Slide the crepe onto a flat surface and repeat

Cupcat Cupcakes

So: it's a lazy Saturday and I got a little bored and decided cupcakes were an excellent outlet. Thus the cupcat  cupcakes were forged in the kitchen of deliciousness! They're nothing too fancy, but they're yummy, and with a turtle center how could they not be?

So enough with the formalities, lets get baking!!!

What you're gonna need:   (This makes 12 cupcakes)

1¼   cup    Flour
 ¼    cup    Cocoa powder
 ½    tsp     Baking soda
 ¼    tsp     Salt
 ½    cup    Butter
 1     cup    Sugar
 2       -      Eggs
 ½    cup    Sour cream
 ¼    cup    Milk
 1     tsp     Vanilla extract
 12      -      Turtles

How to get Yummy:  Preheat oven to 350° F

1)  In a bowl mix flour, cocoa powder, baking soda and salt together and set aside
2)  Cream the butter and sugar together
3)  Beat in the eggs, one at a time
4)  Mix in the sour cream, milk and vanilla
5)  Gradually beat in the flour mixture
6)  Once everything is well mixed, spoon the batter in to the muffin pan. Only fill it ¼ of the way.
7)  Place a turtle into each muffin cup and cover each one with  the remaining batter
8)  Bake in the oven for 20- 25 minutes

I just did a simple butter cream icing for my cupcakes. Here's the recipe for that too:

½    cup   Butter
½    tsp    Vanilla extract
2     cup   Icing sugar
1     tbsp  Milk

1)  Beat the butter and vanilla together
2)  Add in the sugar and milk, and beat until smooth (and a few drops of food colouring if you so choose)
3)  Spoon into a piping bag  and have fun

Nutella Rocky Road Ice Cream


























For hot days like it was outside today who wants to put effort into dessert? Or for that matter turn on the oven! This recipe is perfect for the lazy hot days. All you need is a blender, a few ingredients and you are well on your way to delicious. The best part, there is no need for an expensive ice cream maker.

What you're gonna need:

3      -      Banana
½    cup   Nutella
¼    cup   Mini marshmellows
¼    cup   Chocolate chips
¼    cup   Chopped walnuts

Throw everything in the blender, and blend until the banana is smooth. Put your mixture into a air tight container and freeze it. Waiting is the hardest part, but once it's finally frozen enjoy it however you like.

Blueberry Oatmeal Cookies

























Summer is just around the corner! And summer makes me crave fresh fruit, especially blueberries! Blueberries are my favorite summer time fruit, so it's only natural to combine them with delicious oatmeal cookies. The perfect refreshing and light summer treat.

What you're gonna need:

 ½   cup   Margarine
 ½   cup   Brown sugar
 ½   cup   Sugar
 1      -     Egg
 ½   tsp    Vanilla
1¼  cup   Quick oat
 1    cup   Flour
 ¾   tsp    Baking soda
 ⅛   tsp    Salt
 1    cup   Fresh blueberries


How to get yummy:   Preheat oven to 350° F

1)  In a large bowl cream together the margarine, the brown sugar, and the white sugar 
2)  Add in the egg and vanilla. Beat until well mixed
3)  In a separate bowl mix the oats, flour, baking soda, and salt together 
4)  Gradually combine the flour mixture into the egg bowl
5)  Once all the flour is amalgamated into the cookie dough, toss in the blueberries. Stir carefully. You dont want to smoosh them 
6)  Shape into 1 inch balls and place in the oven 
7)  Bake for 10 - 12 minutes

Roasted Duck with Apple and Prune Stuffing


This weekend was mothers day, and my mom and I made one of the tastiest mother's day feasts this side of Yums-ville: roasted duck with a delicious apple and prune stuffing.  The apple stuffing has to be my favorite part. You never really had stuffing until you have had apple stuffing from duck! It's indescribably delicious and perfectly balanced.

Now enough about the stuffing, lets get cooking!

What you're gonna need:

1             Roasting duck
¾   cup    Red wine
3    cup    Large croutons
1    cup    Diced apples
¾   cup    Drained chopped prunes
½   cup    Walnuts
½    tsp    Paprika
½    tsp    Cinnamon 
1    tbsp    Lemon juice
4              Dried and halved apricots


How to get tasty:

1)  Preheat oven to 450° F
2)  In a large bowl mix together the croutons, apples, prunes, walnuts, spices, lemon juice and apricots
3)  Once everything is combined, take ¼ cup of the red wine and stir it into the apple stuffing
4)  Take the de-thawed  and cleaned duck and begin stuffing it. Stuff both sides as full as you can with delicious stuffing
5)  Place the duck and any remaining stuffing in a roasting pan. Cover and place in oven
6)  Immediately reduce oven heat to 350° F
7)  Roast the duck for 20 minutes per pound
8)  Take ½ a cup of the red wine and drizzle it over the duck, once its been in the oven for about an hour.
9)  Drizzle the last cup of wine over the duck about an hour later
10)  Once the duck is finished, allow to rest for 5- 10 minutes and enjoy!

Butter Milk Cheddar Biscuits



This is by far the easiest and most delicious bread I have ever made. It is so easy and soooo soooo  soooooo GOOD! Moist, soft, salty and a little bit cheesy..... What mare can you ask for in a biscuit really?
So lets get baking!!

 What you're gonna need:

 3      cup   Flour   
 3      tsp    Baking powder
 ¾     tsp    Baking soda
1¼    tsp    Salt
 6     tbsp   Butter
1½    cup   Butter Milk
 ½     tsp    Garlic Powder
 1      cup   Aged Cheddar Cheese, shredded
 2      tsp    Oregano

How to get tasty : 

1)  Preheat oven to 450° F
2)  Mix together flour, baking powder, baking soda and salt 
3)  Cut in the butter and mix with a fork or knife until the mixture resembles cornmeal 
4)  Add in the butter milk slowly 
5)  Once all the butter milk is added knead the dough until any left over flour is mix in
6)  Knead in the garlic, shredded cheddar and oregano 
7)  Shape  the dough to desired biscuit size and place on cookie sheet
8)  Bake for 12-15 minutes

Walnut Burgers


This bad boy is 100% yum. Even my meat loving hubby prefers the walnut burger to "real deal". So pull out the slap chop and lets get cookin'!

What you're going to need:

1   cup   Chickpeas
1   tsp    Olive oil
1   cup   Onion (finely chopped)
½  tsp    Garlic powder
¼  tsp    Pepper
¼  tsp    Salt
¼  tsp    Cumin
1   cup   Mushroom (finely chopped)
1   cup   Walnuts (finely chopped)
½  cup   Bread crumbs
¼  cup   Cilantro (coarsely chopped)
½  cup   Water

How to get tasty:

1) In a pot boil the chickpeas for 15 minutes. Drain and allow to cool.
2) With a slap chop, or food processor if your so inclined, finely chop the onion, mushroom, walnut and chickpeas. * Prepare each ingredient separate for now.*
3) Over medium high heat, heat the olive oil in a deep frying pan. Add in the onion, garlic powder, salt pepper and cumin. Cook until the onion is tender. (5 minutes)
4) Stir in the mushroom and cook until completely tender and no liquid remains. (5 minutes)
5) Add the walnuts and the chickpeas. Stir until everything is well mixed
6) Finally, toss in the bread crumbs, cilantro and water. Mix until it all binds and takes on a meat texture.
7) Remove from heat and allow to cool. Once its cool enough to touch, form patties. Makes about 4.
8) Turn oven to broil. Put the patties on a greased cookie sheet and into oven.
9) Broil until golden brown on each side.

Note : It goes great with a Jalapeno Havarti

Franken-Brownie

"IT'S ALIVE!!!!!!!!!"

This brownie is a peanut-butter cookie base, a nutella brownie middle and a rocky road icing top. Yep. You read that right. It is a monstrosity of flavors and all the better for it. 

Now lets get cooking!

Layer 1: Peanut-butter Cookie

1/2    cup    Butter
1/2    cup    Chunky peanut-butter
1/2    cup    Sugar 
1/2    cup    Brown sugar
  1       -      Egg
  1     cup    Flour
1/2     tsp    Baking powder  
1¼     tsp    Baking soda



1)  Cream together butter, peanut-butter and both sugars 
2)  Beat in the egg
3)  In a separate bowl  mix together the flour, baking soda and baking powder
4)  Combine the flour mixture to the peanut-butter mixture 
5)  Spread into a greased 8x8 pan 
6)  Put in fridge for now

Layer 2: Nutella Brownie

  1    cup    Nutella
  2      -      Eggs
2/3   cup    Flour   

1)  Preheat oven to 350° F
2)  Beat egg and nutella together until smooth
3)  Mix in flour 
4) Pour over the peanut-butter layer and bake for 30-45 minutes (until tooth pick comes away clean)


Layer 3: Rocky Road Icing  

2/3    cup    Mini marshmallows
  3    tbsp    Butter
  3    tbsp    Water
1/6    cup    Chocolate chips
1½    cup    Icing Sugar 
2/3     tsp    Vanilla 

1)  In a sauce pan melt marshmallow, butter, water and chocolate chips until smooth
2)  Transfer into a bowl 
3)  Mix in sugar and vanilla, beat until cool and thick 
4) Spread over cooled brownies

Peanut-butter Nutella Cookies


We all know nutella makes EVERYTHING more delicious... So naturally it needs to go in cookies, and what is better then peanut-butter cookies?  Nothing!.... Except maybe peanut-butter cookies with chocolate chunks.  Mmmmh

So with no delay, lets start baking!



What you're going to need:

1/2        cup       Butter
1/2        cup       Chunky peanut-butter
1/2        cup       Sugar
1/2        cup       Brown sugar
  1           -          Egg
  1         cup       Flour
1/2         tsp       Baking soda
1¼         tsp       Baking powder
1/2        cup       Chocolate chunks
1/4        cup       Nutella


How to get tasty:

1) Preheat oven to 350º F
2) Cream together butter, peanut-butter, and the sugars
3) Beat in the egg
4) In a separate bowl mix together flour, baking soda and baking powder
5) Combine the flour mixture to the peanut-butter mixture. Stir until all the flour is integrated
6) Mix in the chocolate chunks and with a fork mix in the Nutella. You want it to marble
7) Roll into roughly 1 inch balls and slightly flatten on a cookie sheet
8) Put in oven for 10 -15 minutes

Oreo Smashers

If you're looking for something simple to make, sweet and sooo good you'll be going back for fourths and fifths... This is for you!

It's seriously easy. All you need is a big box of Oreos, a bag of marshmallows and a dash of vanilla and we are in business baby... Really, that's it!

So take that bag of Oreos and smash em up. It's a great way to get out the days stress... as you can see from my little video I certainly take the opportunity  haha

Once your Oreos are nicely broken up, melt down the marshmallows, about 3 quarters of a bag should be good.

Stir in a teaspoon of vanilla

When everything is all melted and a gooey mess it's time to stir in the broken Oreo bits. After it's all mixed together, spread into an 8x8 pan and let cool.

Refrigerate it if you are eager for dessert.... no one will judge you :)
