This has to be one of my favorite weekend breakfast things to eat. It is a mess of yummy banana goodness. Great for when there is bananas left over at the end of the week and you have a hankering for something sweet.
3 Slightly over ripe bananas
1 Egg
1/2 tsp Cinnamon
1/2 cup Sugar
2 cup Flower
1 tsp Baking powder
1/2 cup Milk
1/4 cup Chocolate chips
1/4 cup Oil
Sugar topping: (optional)
1/3 cup Sugar
1/2 tsp Cinnamon
How to make it (roughly 20 minutes to make):
- In a large bowl, mash the bananas
- Beat in the egg, cinnamon and sugar
- Sift flower and baking soda together and mix into the banana batter
- Add in the milk and chocolate chips
- Stir until everything is well mixed
- heat oil in a frying pan ( medium-high heat)
- Drop a big dollop of batter into the pan
- Cook to golden brown and flip
- Once completely golden brown toss in the cinnamon sugar
- Serve and enjoy :)
